Makkelijke paddenstoelencurry met paneer uit de oven.
Ik ging even de fout in. Voordat ik weer startte met bloggen wist ik dat ik consequent elke week een bericht moest posten. Doe ik dat niet, dan komt direct de klad erin. En zie hier: 3 weken schitter ik alweer van afwezigheid. Waardeloos natuurlijk. Wel goede zelfkennis, maar daar kopen jullie niks voor.
Enfin toch maar even achter de laptop dus. Want dit is een receptje dat ik graag maak, wij eten dit dan ook regelmatig. Inspiratie komt van een paddenstoelencurry met paneer van Jamie Oliver, maar inmiddels echt mijn eigen recept geworden. Het is zo’n recept wat eigenlijk niet mis kan gaan maar wat o zo lekker is. Door het gebruik van verschillende soorten paddo’s (ha-ha, slechte grap I know) krijgt de curry een hele fijne structuur. Het recept is lekker vegetarisch!
Maar het is de paneer die het afmaakt, lekker romig erbij. Ken je paneer nog niet? Begrijpelijk, je zult niet de enige zijn!. Paneer is een Indiase kaas op basis van melk en een zuur. Een hele milde kaas, je kan de smaak wat vergelijken met huttenkase. In India is de kaas heel populair omdat veel mensen hier vegetarisch eten. Je kan de kaas goed bakken, hij wordt aan de buitenkant stevig en zachter vanbinnen. Erg lekker! Je koopt het bij bijvoorbeeld de Appie (vaak in zo’n pakje van Appetina).
Het recept voor deze paddenstoelencurry met paneer is voor 2 personen. Dat betekent dat je best wat ingrediënten overhoudt. Ik doe hier altijd standaard hetzelfde mee: de volgende dag maak ik weer een curry, dit keer met left overs en voorraadkast spullen. Hier gaan onder andere aardappel en diepvrieserwtjes in. Perfect vind ik dat! Dit recept zal ik volgende week met jullie delen, heb je gelijk inspiratie voor 2 dagen koken.
Denk nou niet dat een curry maken moeilijk is. Eerlijk het valt mee, you can do this.
Dit heb je nodig voor 2 personen:
400 gr gemengde paddenstoelen, in stukjes gescheurd en gesneden
1 ui, in halve ringen
2 tenen knoflook, geperst
3 cm gember, geschild en in kleine stukjes gehakt
3/4 chilipeper, klein gehakt
1 tl kerriepoeder (investeer in een lekkere, bijvoorbeeld de curry madras van Johnny Boer)
1 tl gemalen koriander
1/2 tl kurkuma
1/2 tl mosterdzaad
2 tomaten, in blokjes
200 ml kokosmelk
2 limoenbladeren (vers of diepvries, je koopt dit bij de Toko)
110 gr paneer, in blokjes
150 gr rijst
koriander
Zo maak je het:
Verwarm de oven voor op 200 graden. Zet een pan die ook in de oven mag (heb je die niet dan schep je alles in een ovenschaal voordat het de oven in gaat) op het vuur en bak hierin de paddenstoelen in een minuut of 5-8 goudbruin. Voeg wat olie en de ui, knoflook, gember, chilipeper en alle specerijen toe en bak 2 minuten. Voeg dan de tomaten en kokosmelk toe, breng op smaak met zout en peper en roer goed door.
Verdeel de paneer over de curry en schuif de pan 30 minuten in de oven. Je hoeft tussendoor niet te roeren. In dezelfde tijd kook je ook de rijst klaar, volgens de verpakking of op je eigen manier.
Serveer de curry met de rijst en verdeel er wat koriander overheen.
